Denise Anderson, Canada's Centennial Baby, was
born July 1, 1967 in Ladysmith on Vancouver Island.
This Covergirl, TV & Movie
Star, PETA Advocate, Internet Sensation, and Supermom is
a Vegan. Not a strict vegetarian, she has
been spotted having a salad with goat cheese and
angel-hair pasta with tomato & basil for lunch, and also
likes fish, a favorite of hers is grilled Chilean sea
bass with stir-fried bok choy on the side. She is
known to snack on flaming-hot Cheetos and Pringles
light BBQ flavor. Like most of us, she has a
weakness for Chocolate, especially Hershey's Kisses and
organic chocolate. Declaring that she loves red
wine & champagne, she can be seen clutching a flute of
Cristal Champagne at special occasions.
Diagnosed with Hepatitis C,
Pamela has written in her online diary that her New
Year's resolution was to never put anything bad in her
body again - like alcohol. Her goal is to get
super healthy and look after herself. Her mostly
vegetarian diet helps her maintain good health & weight
as it is low-fat and consists of natural foods with
little or no artificial supplements. She says that
her liver gets better every year, and she's not on any
treatment, but eats lots of avocados.

Jason Harley's (aka Chef J) BlackSteel Restaurant
on Hollywood Boulevard. The menu features French
cuisine with healthy Japanese influences. Among
the dishes listed, Pamela will probably select the
Chop Shop Vegetable Salad - with Avocado, Vine Ripe
Tomato, Crumbled Boursin & Balsamic Herb Vinaigrette, Seared
Rare Ahi Blue Fin Tuna - with Grilled Mango, Papaya
Relish & Seven Spice
Orange Reduction, or
Spiced
Crusted Wild King Salmon - with Grilled Squash,
Roasted Tomatoes with Shiso Pesto & Pumpkin Coconut
Sauce. Chef J has also worked closely with Pamela
Anderson to include many of her favorite vegetarian
dishes on the menu. Featured each week will be
"Pam's menu" with her recipes, some of which she learned
from her mother and have been passed down for
generations.
General Hepatitis C Dietary Advice:

Have Regular, Balanced Meals -
Eat at least 3 meals
a day. To keep your energy up, eat small meals
or snacks every 3 to 4 hours. Include all 4
key food groups in your diet; a) Breads, cereals &
grains, b) Vegetables & fruits, c) Dairy products,
d) Meats, fish, beans, nuts & eggs.

Eat
Plenty of Cereals, Breads & Grains -
The bulk of your diet should be carbohydrates which
are full of B vitamins & minerals. Go for "Whole
Grains" as opposed to "Refined Grains"; look at
the labels to check for whole grain ingredients
which includes: brown rice, wild rice, bulgur,
graham flour, oatmeal, whole oats, whole rye, whole
wheat, whole grain corn, and other "whole grain".

Consume lots of Fruits & Vegetables -
Have at least 5 servings of fruits & vegetables
each day as they contain many essential nutrients,
as well as antioxidants to fight cell damage.
They are also naturally low in fat, sodium &
calories.

Get Adequate Protein - Dairy
products, lean meats, fish, soy, nuts & eggs are
good sources of protein, which helps fight
infections, heal liver cells & other body tissue,
and maintain muscle. You may wish to select
low-fat foods and also avoid red meats. Use
healthy cooking styles like baking, boiling,
grilling, microwaving or steaming.

Reduce Fatty, Salty , Sugary Foods & Avoid Alcohol -
Avoid fat from animal sources, including milk &
butter, and trans-fats. Cut out as much salt
(sodium) from your diet as possible by eating more
natural instead of processed foods. Eliminate
sugary foods to lower your intake of calories; give
up some desserts & pastries and switch to fruits
instead. It is best to completely lay off
alcohol as it is a toxin that can damage the liver,
even in healthy people that do not have Hepatitis C.

Drink Enough Fluids - Drink 6 to 8
glasses of fluids per day to keep yourself well
hydrated. Water, fruit/vegetable juice,
herbal tea, soup, sorbet all count.

Maintain a Healthy Weight - Being
overweight or underweight is not healthy. It
is best to maintain a healthy weight; consult your
doctor to find out your ideal weight range. In
addition to a healthy diet, regular exercise will
also help you to keep within your desired weight
range; again, consult your doctor to recommend an
exercise regime to fit your needs.
