Mother's Day Treats

Main Course Inspirations . . .
To allow
you creative options and yet keep preparation simple,
let's suggest one-dish pasta meals. Simply select
your choice of pasta from the many varieties available,
pick Mom's favorite fish, meat or seafood, vegetables,
and whip up a tasty sauce to bring it all together.
Consider
these options:

Beef or
pork with onions, carrots and mushrooms in a tomato &
herb based sauce on Fusilli, topped with grated
parmesan.

Chicken
with sun-dried tomatoes and asparagus on Spaghetti,
garnished with pine nuts.
Halibut
grilled with paprika & turmeric, topped with spring
onions. Sliced tomatoes , grilled asparagus & mushrooms
with cheddar, and tri-color Spirals on the side.

Buckwheat
Rotini with brocolli & cherry tomatoes, and Mahi Mahi
with mushroom sauce & toasted pine nuts.
Baby
lobster tails on a bed of Fusilli with a rich sauce of
lobster stock, garlic, olive oil, lemon, tomato paste &
herbs, finished with a generous sprinkle of grated
Romano cheese.
Should
Mother prefer something on the lighter side instead,
then try your hand at salad style main dishes; here are
two ideas to get you going:
Add
shredded grilled chicken and slices of mango into
your mix of salad greens. Throw in shredded
carrots and purple cabbage for color and top off with
Mom's favorite dressing. Add a whole wheat wrap to pad
it up if needed.
For
a lovely presentation, line your salad bowl with large
romaine lettuce leaves. Fill up with a mix of
salad greens, then form a ring of sliced avocados and
cherry tomatoes round the edge. Top the bowl up
with a mixture of tuna flakes, chives, crushed black
pepper and a light salad dressing.
